SEAFOOD Decomposition WORKSHOP

For Analytical Laboratories, Regulatory Personnel and the Seafood Industry

Sponsored by Hawaii State Department of Health, Food & Drug Branch

In cooperation with the United States Food and Drug Administration

The Seafood Decomposition Workshop is designed for all segments of the seafood industry (e.g. processors, distributors, brokers, importers, retailers, restaurants and analytical laboratories).  The workshop provides hands-on participation in analyzing seafood samples.  Through sensory (sniffing and visual) exams, participants will be able to detect samples that FDA accepts and rejects.  Quality and safety issues will be addressed throughout the course.  FDA's sensory experts will provide training in seafood sensory evaluation and quality attributes related to decomposition.

Please dress casually and avoid wearing perfume, cologne or scented lotions.  These scents may interfere with the sensory analysis of the fish.
